I've grown mullein, and it's a great choice! It does grow quite tall, sometimes reaching up to 6 feet, and it's fantastic for attracting pollinators like bees and butterflies. It's very low maintenance, thriving in well-drained soil with full sun. It doesn't need much water, as it's quite drought-tolerant once established. One thing to note is that it can self-seed prolifically, so you might want to deadhead the flowers if you don't want it spreading.
